Maison Deutz Cheese-the perfect appetizer

Back in the days before Laetitia Vineyard & Winery came to be, we were a house of world-renowned sparkling wines, called Maison Deutz.  We produced some of the finest sparkling wines known to the US and we still produce these wines today!  If you visit us in our tasting room right off of the 101 in between Nipomo and Arroyo Grande you will find our seven effervescent wonders known as our Brut de Blancs, Brut de Noirs, Brut Cuvée, Brut Coquard, Cuvée M, Brut Rosé and XD.  They range from a dry style to a semi-sweet, ensuring that we truly have something for everyone!

Looking through our archives from the Maison Deutz days, I came across a perfect appetizer recipe that is one of my favorites.  It is simple, has few, easy to find ingredients and it is  delicious!  With the upcoming Super Bowl XLV in mind, try the famous “Deutz Bleu Cheese Spread”, sure to please both Giants and Patriots fans alike!

 

DEUTZ BLEU CHEESE SPREAD

4 oz. bleu cheese, crumbled, at room temperature

12 oz. cream cheese, at room temperature

2  Tablespoons Maison Deutz  (now Laetitia) Sparkling Wine

½  cup finely chopped pecan pieces

3  Tablespoons fresh chives, finely chopped

1  Teaspoon freshly ground black pepper

  1.  In a food processor fitted with steel blade, or in a blender, mix the bleu cheese, cream cheese, and Sparkling Wine until smooth.  Transfer the mixture to a bowl.
  2. Add the pecans, chives and pepper and stir to mix well.  Adjust seasonings to taste.  Cover and refrigerate until ready to use.  This will keep in the refrigerator for 3 days.
  3. Yields 2 cups.

*Optional Step-I like to add a little bit of chopped fresh apricot, it adds an extra element of freshness that really ties together well with the bleu cheese and pepper. (You can use dried apricot also)
